Pre-ground black pepper is a tragedy. Within weeks of grinding, pepper loses its volatile oils — the very compounds that give it heat, sharpness, and that specific piney aroma. By the time most pepper reaches your plate, it's just dust that vaguely tastes of warm.

You buy a peppermill, you grind right before use, and suddenly you understand why pepper is one of the world's most valuable spices.
How to use: Freshly ground at the table over eggs, dal, soup, anything. Whole in slow-cooked dishes — biryani, rasam, stews — where it releases flavor over time. Crush coarsely with a mortar for kali mirch chicken or peppercorn rasam.
